Ingredients
  

  • cups all-purpose flour 188 g
  • ¾ teaspoon baking powder 3 g
  • 1 tablespoon cornstarch 8 g
  • ½ cup butter softened (113 g)
  • ½ cup packed brown sugar 100 g
  • ½ cup granulated sugar 100 g
  • 1 cup creamy peanut butter 256 g
  • 1 large egg preferably at room temperature
  • 1 teaspoon vanilla extract 5 ml

Method
 

  1. Prepare the oven and baking sheets. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Combine the dry ingredients. Sift the flour, baking powder, and cornstarch into a bowl. Set aside.
  3. Cream the butter and sugars. Beat the softened butter, brown sugar, and granulated sugar with a mixer until creamy and well combined. Scrape down the sides of the bowl.
  4. Add the peanut butter. Beat in the peanut butter until evenly incorporated.
  5. Mix in the egg and vanilla. Add the egg and vanilla extract. Beat until combined, scraping the sides and bottom of the bowl as needed.
  6. Add the dry ingredients. Gradually mix in the flour mixture on low speed just until no dry flour remains. Avoid overmixing.
  7. Shape the cookies. Divide the dough into 32 portions and roll into small balls. Arrange on the prepared baking sheets about 2 inches (5 cm) apart.
  8. Make the fork marks. Gently flatten each ball with a fork, then press again in the opposite direction to create a crisscross pattern.
  9. Bake. Bake each tray for about 10 minutes, until the edges are set and the tops no longer look wet. The centers may still feel soft.
  10. Cool. Allow the cookies to cool on the baking sheet before moving them. They will firm up as they cool.

Notes

  • Peanut butter: Creamy peanut butter that does not require stirring gives more consistent results. Natural peanut butter may affect the dough’s texture and spreading.
  • Measure carefully: Weigh the flour or spoon it into your measuring cup and level the top without packing it down.
  • No chilling required: If the dough becomes too soft to shape in a warm kitchen, refrigerate briefly until manageable.
  • Avoid overbaking: Do not wait for the centers to feel completely firm in the oven.
  • Storage: Store cooled cookies in an airtight container at room temperature for up to 5 days.
  • Freezing: Freeze baked cookies for up to 3 months, placing parchment paper between layers. Thaw at room temperature.
