These Homemade Pretzel Buns are soft and fluffy on the inside with a chewy, deep golden pretzel crust. A quick baking soda bath gives them their classic pretzel flavor and beautiful bakery-style finish, making them perfect for burgers, sandwiches, or serving alongside soups and dips.

Ingredients
  

For the Dough
  • cups warm water (360 ml)
  • 1 tbsp granulated sugar (12 g)
  • 1 tbsp active dry yeast (9 g)
  • 1 tbsp salt (15 g)
  • 3 tbsp vegetable oil (45 ml)
  • 4 cups all-purpose flour (500 g)
For the Baking Soda Bath
  • cups water (2 liters)
  • cups baking soda (160 g)
For Topping
  • Sesame seeds, as desired

Equipment

  • 1 Large mixing bowl
  • 1 Wooden spoon or silicone spatula
  • 1 Large pot
  • 1 Slotted spoon
  • 1 Baking sheet
  • 1 Parchment paper
  • 1 Sharp knife or bread lame
  • 1 Measuring cups and spoons
  • 1 Clean kitchen towel or plastic wrap

Method
 

  1. Activate the yeast: Pour the warm water into a large mixing bowl. Add the sugar and stir until dissolved. Add the active dry yeast and gently mix. Cover and let stand for 5-10 minutes, until foamy.
  2. Make the dough: Add the oil and salt to the activated yeast mixture. Gradually add the flour, mixing until a soft dough begins to form.
  3. Knead: Transfer the dough to a lightly floured work surface and knead for about 5 minutes, until smooth, soft, and elastic. Add only a small amount of additional flour if needed.
  4. First rise: Shape the dough into a ball and place it in a lightly oiled bowl. Cover with plastic wrap or a clean kitchen towel and let rise in a warm place for 45–60 minutes, or until doubled in size.
  5. Shape the buns: Gently press the risen dough to release excess air. Divide it into 8 equal pieces and shape each piece into a smooth, tight ball.
  6. Prepare the baking soda bath: Bring 2 liters of water to a boil in a large pot. Carefully add the baking soda. Add it slowly because the water may bubble up.
  7. Boil the buns: Carefully place the buns into the baking soda bath, working in batches if necessary. Boil each bun for about 1 minute total, turning after 30 seconds.
  8. Drain: Remove each bun with a slotted spoon, allow the excess water to drain, and place it on a parchment-lined baking sheet.
  9. Top and score: Sprinkle the tops with sesame seeds. Using a sharp knife or blade, cut a small X into the top of each bun.
  10. Bake: Bake in a preheated 390°F (200°C) oven for 15–20 minutes, or until the buns are deeply golden brown.
  11. Cool: Remove from the oven and allow the buns to cool slightly before serving.

Notes

  • The water used to activate the yeast should be warm, not hot.
  • If the yeast does not become foamy after 5-10 minutes, it may no longer be active.
  • Keep the dough soft and avoid adding too much flour.
  • Add the baking soda to the boiling water carefully because it can foam quickly.
  • Boil each bun for approximately 30 seconds per side.
  • Do not skip the baking soda bath-it creates the characteristic pretzel crust, color, and flavor.
  • Score the buns after boiling and before baking so they can expand evenly in the oven.
  • Baking time may vary slightly depending on your oven.
  • Let the buns cool slightly before slicing so the interior can set properly.
