Easy Chewy Pumpkin Cookies

These pumpkin cookies have soft, chewy centers, buttery edges, and a spiced sugar coating. Made with real pumpkin, brown sugar, and vanilla, they’re a delicious homemade fall treat.

For the Spiced Sugar Coating
  • ¼ cup granulated sugar 50 g
  • ½ teaspoon pumpkin pie spice
For the Pumpkin Cookies
  • ¾ cup unsalted butter softened (170 g)
  • 1 cup packed light brown sugar 220 g
  • 2 large egg yolks at room temperature
  • 2 teaspoons vanilla extract 10 ml
  • ½ cup pumpkin purée about 120 g before removing excess moisture, well drained
  • cups all-purpose flour 219 g
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon cornstarch 8 g

Method
 

  1. Prepare the oven and baking sheets. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Make the coating. In a small bowl, combine the granulated sugar and ½ teaspoon pumpkin pie spice. Set aside.
  3. Drain the pumpkin. Place the pumpkin purée in a clean kitchen towel or cheesecloth and squeeze thoroughly to remove excess moisture.
  4. Mix the dry ingredients. In a medium bowl, whisk together the flour, pumpkin pie spice, baking soda, baking powder, salt, and cornstarch.
  5. Cream the butter and sugar. In a large bowl, beat the softened butter and light brown sugar until creamy. Add the egg yolks, vanilla, and drained pumpkin purée. Mix until evenly combined, scraping down the bowl as needed.
  6. Finish the dough. Add the dry ingredients and mix on low speed just until incorporated. Use a spatula to bring in any flour remaining at the bottom of the bowl.
  7. Shape and coat. Portion the dough with a small cookie scoop and roll it between your hands into balls. Roll each ball in the spiced sugar mixture.
  8. Arrange on the baking sheets. Leave about 3 inches (7.5 cm) between the dough balls because the cookies spread considerably. Bake in batches as needed.
  9. Bake. Bake for 12–15 minutes, until the edges are set and the centers still look slightly soft. Begin checking at 12 minutes.
  10. Cool. Let the cookies cool on the baking sheet before moving or serving. Allow the baking sheet to cool before adding another batch of dough.

Notes

  • For chewy cookies: Remove excess moisture from the pumpkin thoroughly and avoid overbaking.
  • Pumpkin: Use plain pumpkin purée, not sweetened pumpkin pie filling.
  • Butter: Use softened butter that still holds its shape, rather than melted or very warm butter.
  • Flour: Weigh it if possible, or spoon it into the measuring cup and level it off.
  • Soft dough: If the dough becomes too soft to roll, chill it briefly until manageable.
  • Yield: Makes approximately 15 cookies, depending on portion size. Smaller cookies may bake faster.
  • Storage: Store completely cooled cookies in an airtight container at room temperature for 3-4 days.
  • Freezing: Freeze with parchment between layers for up to 3 months. Thaw at room temperature.
