Spiced Apples
  • 6 medium apples peeled, cored, and chopped (about 900 g before peeling and coring)
  • 2 tablespoons granulated sugar 25 g
  • ¾ teaspoon ground cinnamon
  • 1½ teaspoons lemon juice 7.5 ml
  • 1 teaspoon vanilla extract 5 ml
Crisp Topping
  • 1 cup packed light brown sugar 200 g
  • ¾ cup all-purpose flour 94 g
  • ¾ cup oats rolled or quick (60 g)
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • ½ cup cold butter cut into small cubes (113 g), plus extra for greasing

Method
 

  1. Preheat the oven: Preheat to 350°F (175°C). Grease an 8 × 8-inch (20 × 20 cm) baking dish with butter.
  2. Prepare the apples: Place the peeled, cored, and chopped apples in the prepared dish. Add the granulated sugar, cinnamon, lemon juice, and vanilla extract. Toss to coat evenly, then spread into an even layer.
  3. Mix the topping: In a bowl, combine the brown sugar, flour, oats, cinnamon, and salt. Add the cold, cubed butter and work it into the dry ingredients with a fork until the mixture is crumbly with small clumps.
  4. Assemble: Sprinkle the oat topping evenly over the apples, covering the surface without pressing it down firmly.
  5. Bake: Bake for 40–50 minutes, until the topping is golden, the juices are bubbling around the edges, and the apples are tender when pierced with a knife. If the topping browns too quickly, cover loosely with foil and continue baking.
  6. Rest and serve: Remove from the oven and let rest for 15 minutes. Serve warm with vanilla ice cream, if desired.

Notes

  • Apples: Granny Smith, Honeycrisp, or Braeburn work well. Combine sweet and tart apples for a balanced filling. Cut the pieces evenly so they bake at the same rate.
  • Oats: Rolled oats give a more noticeable texture; quick oats create finer crumbs. Do not use steel-cut oats.
  • Butter: Keep the butter cold and leave some small clusters in the topping.
  • Storage: Cool, cover, and refrigerate for up to 4 days. Freeze in a freezer-safe container for up to 3 months and thaw overnight in the refrigerator.
  • Reheating: Warm at 350°F (175°C) for about 15-20 minutes, or until heated through.
