Ingredients

For the Burger Patties
  • 14 oz ground beef (400 g)
  • 1 large egg
  • 1/2 cup plain yogurt (120 g)
  • 1/3 cup breadcrumbs, plus more if needed (35–40 g)
  • Salt, to taste
  • Ground black pepper, to taste
  • Garlic powder, to taste
For the Creamy Burger Sauce
  • 1/4 cup mayonnaise (60 g)
  • 1/4 cup mustard (60 g)
  • 1/4 cup ketchup (60 g)
  • 1/3 cup sour cream (80 g)
  • 1 1 finely grated pickle, optional
  • A few drops of fresh lemon juice, optional
For Assembling
  • 4 large homemade burger buns
  • Lettuce leaves
  • 1 tomato, sliced
  • 1 fresh cucumber, sliced
  • Pickles, sliced
  • 1 onion, thinly sliced

Equipment

  • 1 Large mixing bowl
  • 1 Small mixing bowl
  • 1 Burger press, optional
  • 1 Parchment paper
  • 1 Large skillet or grill pan
  • 1 Spatula
  • 1 Cutting board
  • 1 Sharp knife
  • 1 Meat thermometer, recommended

Method

  1. Wash and slice the lettuce, tomato, cucumber, pickles, and onion. Keep the toppings refrigerated until needed.
  2. Place the ground beef in a large bowl. Add the egg, yogurt, salt, black pepper, and garlic powder. Mix until evenly combined.
  3. Add the breadcrumbs and gently mix them into the meat. Let the mixture rest for 10 minutes so the breadcrumbs can absorb the excess moisture. If it remains too soft, add 1-2 additional tablespoons of breadcrumbs.
  4. Combine the mayonnaise, mustard, ketchup, and sour cream in a small bowl. Add a grated pickle or a few drops of lemon juice if desired. Refrigerate until serving.
  5. Divide the meat mixture into four equal portions. Using a burger press lined with parchment paper, shape each portion into a large, even patty. You can also shape the patties by hand.
  6. Heat a large skillet or grill pan over medium heat. Cook the patties until nicely browned on the first side, then flip and cook until fully cooked through. Ground beef patties should reach an internal temperature of 160°F (71°C).
  7. Cut the burger buns in half and lightly toast or warm the cut sides in a clean skillet.
  8. Spread the creamy burger sauce over both halves of each bun. Layer the pickles, cooked burger patty, cucumber, lettuce, tomato, and onion on the bottom half.
  9. Cover with the top half of the bun and serve immediately while warm.

Notes

  • This patty mixture is softer than a traditional meat-only burger mixture.
  • Letting it rest is important because the breadcrumbs need time to absorb the extra moisture.
  • Chill the shaped patties for 20-30 minutes before grilling if they feel very soft.
  • Ground turkey, chicken, pork, or mixed ground meat may be used instead of beef, but the safe cooking temperature may differ.
  • Store the patties, buns, sauce, and fresh toppings separately to prevent soggy burgers.
  • Nutritional values are estimates and depend on the buns, meat, toppings, and amount of sauce used.
